A Pork Collar from my local butcher.....

Thru this little fellow on the medium while working day two in the yard. Got some great wiffs of the peach chips throuhout the afternoon. I threw on some scattered and smothered hashbrowns onto the Blackstone 17 incher.
No plated pic's.......tired from the yard work....and it slipped my mind. Hope you all had a great weekend.

    I've never done a pork collar either. What is it similar too? a pork roast?

    I sliced into about 1 1/2 I'm inch thick steak typ portions.. I pulled at 175.

    More tender and with more fat than a pork roast. Sometimes I finish it off in a cast iron sear (butter and olive oil. Not tonight though.
