Pork Belly Recommendations

My local Costco never stocks Pork Belly....until today!

picked up 4 lbs for $15 and it felt like a steal

Now the question becomes, what do I do with it?  Can I cure it into bacon, or does the preslicing make that more difficult?

Any suggestions and advice would be appreciated.

You can cure it.  Since it's sliced, it will cure faster.

Suggestion - Cure it.  Then season it several different ways - savory, sweet, southern, italian, etc.  Then see what shakes out.

I saw them too but decided not to buy since there's no skin for crackling.

  • I have seen these too at Costco and they some whole ones.  I have been afraid of getting them since I don't have a meat slicer and don't trust my knife skills enough to cut it all by hand.  I was thinking about doing some pork belly sliders though, but need to find some good instructions.

Same here, bought a pack the other day  at Rochester, NY Costco. Usually buy them whole, not in strips. I think there is still skin on them. Checkout bbq pit boys website for their way of cooking them, but it's not strips. Like the packaging boneless pork belly, never seen a bone in pork belly LOL!!
