Question for Memphis/North MS (brisket)

My normal shopping spots (Kroger, Costco) only sell flats. Wanting to try my first brisket next weekend, but want to do a whole packer. Anyone have a good go-to for decent packers? Not looking to drop $100 on first one, but also want something that's going to (hopefully) yield a good product.
Also, and this may be the dumbest question ever posted on here, but if you foil or paper, do you just remove and re-insert the temp probe through the foil/paper after wrapping it?

I have the same situation here in E. TN with Kroger, Costco, Sam's and Publix only selling flats. Walmart is the only place I can find whole packers.
I like to keep it simple and don't wrap but mist with beef broth every hour after the first 5 or 6.

Sam's here in the Boro sells whole packers .... GFS might.Green egg, dead animal and alcohol. The "Boro".. TN

We have Restaurant Depot @ Summer ave and 240. Also Sam's would probably have it. I just called Charlie's and they don't carry anything but flats. You might could request them to order you a full packer. The price for the flat was 5 something a pound.

When I lived in Memphis, RD always had a great selection for a good price. Sam's also carries packers and have been in the 2.50-3/lb recently
charlies will order anything you want but isn't the cheapest but good service.

Found packers (Choice) on sale at Piggly Wiggly in Olive Branch for $2.79/lb. Not sure when sale ends but pretty sure it's good through at least today if anyone is in the area and looking for good price. Picked up a 10lb so will give it a go for first time this weekend.--Because I'm like ice, buddy. When I don't like you, you've got problems.

I always wrap with paper around 160 IT, or when you are happy with the bark. And yes, I just poke the Thermopen through the paper.
