just got a L BGE- I'm a first timer.
I I have a table that is being built. First, is cypress an okay wood choice? Second, is it okay to place the egg on a paver or do I need a table nest?

No comment on the table wood but here's link to a current thread and the paver vs nest discussion.
Bottom-line-air gap the BGE from the table.
New to the site, new EGG, new table!
Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Our XL burn unit at work has been sitting on a 18" round concrete paver for 5 or 6 years now with no issues. However I would use the table nest because most table plans online figure in the 2.5" for the table nest and the corresponding cut out size for the hole in the table top. Another thing to look at would be the smokeware nest ring that they make. I just stumbled across it on their website, and really like the look of them

$30 dollar insurance why not?

According to Big Green Egg either method is acceptable. On their official table plans it says this:
One advantage of an air gap is that makes it easy to slide a pan under the Egg to catch ash when you are scraping it out.“Reality is that which, when you stop believing in it, doesn't go away.” ― Philip K. Diçk -
Since your building a table, I would recommend having a 3/4 inch air. Gap around the center of your table.

I commented earlier on the nest. My table is cypress, I had my large on a paver. The wood under the paver was discolored in under four months. I got a nest.
As as a side note, I wish I'd never built a table and just went with a nest and handler. -
I use a nest and a paver. I'm tall and like the egg a little higher for ease of use.

Table nest is definitely safer than a paver. Choice depends on how much you want to reduce the fire risk. Since you are having a table built, you could always incorporate both into the design. Using fire bricks is also safer than using pavers.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’ Dare to think for yourself.
