Picked up very little color...

Sorry no pictures....been in the mood for a chuckie. Found a 5+ pounder buried in the freezer. Fired up the Egg, while it was coming up to temperature, 250*, I hit it with some vegetable oil and a healthy dose of Tony Chachere's Creole seasoning followed with just a dusting of Slap Ya Mama. Egg was burning Mesquite chunk...same stuff I have been using for years. After 4 hours I fired up the Large. Put on of our CIDO in it while it was warming up. Kept this Egg under 200 for now. At the 5 hours mark I dropped the chuckie, which had a beautiful Mahogany color in the DO and added 4 oz of Fireball whiskey. Ran it up to 350* and let it ride. At 209* IT Mr. Chuckie was probe tender. 
This is the tenth or so chuckle I have done this way. Just like the previous ones this guy came out very tender, juicy with just a hint of sweet. But after pulling this one out of the DO it had very little color...was much lighter in color than when it went it. Had a very thin bark....just like we like it...baffled by the color of it.....it tasted great so suppose it is not a big deal but...

    Not an idea of what happened on this one. But adding a handful of cherry chips will bring your color.  
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
