in Pork
After being on vacation for a week and not getting to use my eggs during the week, I decided I was going to load up the large and let it go all weekend. Did a picnic roast Saturday (no pictures sorry), and ATBs with left over PP, and BB ribs Sunday.
ATBs:
Started by putting a layer of cream cheese down first and seasoning it with Uncle Steve's Shake.
Then I put a couple pieces of the left over pulled pork in.
Then put some shredded colby jack cheese and then put a piece of maple bacon on top. Any cheese that spilled out just put on top of the bacon.
Placed these around the ribs as they cooked. Cooked at 250 for almost 2 hours. Got distracted picking up dog poo in the yard so they went a little longer than expected.
My parents were coming over for dinner so I did two racks of baby backs. One was seasoned with Slap Yo Mama Hot. First time using it and it was good. Had the perfect amount of heat for ribs. Seasoned the other rack with Central BBQs Rib Rub. I love everything from Central.
These cooked at 250 for about 5.5 hrs
I did put a little bit of The Pepper Palace's Blue Berry BBQ sauce on 1/4 of the Slap Yo Mama rack. The sauce is very sweet, but if you let it caramelize it takes some of the sweetness out. If you like blue berries then you would like this sauce.
