Ever have a rack of ribs....

....that had very little fat that needed trimming yet when you cooked them and sliced  them up they had a truck load of fat?
Today was rib day. Ribs looked great prior to cooking them. Used my Reverse Flow. Cooked some beans on one of the Eggs. Temperature got away from me on the smoker, ribs were done in about 3 hours....normally they take about 4. What we did eat was very juicy/tasty....
