Chicken Leftovers ideas

Not new to the forum but first time posting...this place has changed my cooking skills and checkbook 

My wife and I always cook a spatchcock chicken on Sundays because we know we will have leftovers for the following days to use for whatever we decide (we don't have kids).

Our go to options have been:
Chicken Tortilla Soup
Chicken Pot Pie
Chicken Spaghetti (store bought noodles and sauce)
Veggie stirfry with scraps thrown in

 I always season the chicken with salt, pepper, garlic powder, and paprika because I know the scraps will be used for other stuff and I don't want the seasoning to over power other meals.  Question is, how do you season your chicken knowing you will have leftovers and what kind of leftovers do you make?
