We're having friends over for dinner Friday night. They requested chicken. I'm looking for something a little different than the regular spatchcock or bbq. Something different. Anybody got a showstopper?

I have done the gallotine/ballotine a la Jacques Pepin (the master) and it turned out wonderfully. I stuffed with baby spinach and mushrooms, and certainly couldn't debone with the ease that he does it, but it went very well and wasn't that difficult, believe it or notLagrange, GA LBGE

Another vote for the deboned chix. You can (and should) do it when no one else is around (night before) at least for the first go round. First time took me around 35 minutes. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Deboned chicken is actually easier to do than you think. Lots of options for creativity w/ stuffing and could wrap with bacon, baste in a sauce etc. I assure you this is well w/in your skill set. Trust me.

Just the other day I grilled up some lemon chicken breasts. Skinless, boneless marinated 5 hours and yeah, some zip is in the flavor when you bite in. Very taste-eeee.

i haven't tried planked chicken. I have cedar and alder plank. Do you recommend one of those or something else? I'm not sure alder would be good. Do you cook it just like planked fish? Raised direct? No flip? Thanks for the info. I'm giving this a try.XL,L,SWinston-Salem, NC -
I used a cedar one, but the alder sounds great. Yup, just like you would plank a fish. I went indirect if I remember correctly. You just want to get the plank nice and smoky, flip it and add your chicken. The chicken breast is sliced horizontally to form a pocket, then stuffed with cheese. For the mayo slather, combine mayo, bacon crumbles, chopped chipotle with adobo sauce and green onions. Slather that on the top and bake indirect on the plank at around 350-375 until the chicken comes to temp. No flipping the chicken. So good...Hi54putty said:@Dyal_SC

@Dyal_SC I did cook up a new free style ( no recipe) mac and cheese they went crazy over. 2 cans of cream of mushroom with a touch milk and grated cheese. Then add cooked macaroni. Top with crispy fried onions ( same as green bean casserole) and bake it till it looks right. I would have took pics.,but I was a little busy entertaining. I still need to tweak it a little still.
