Awesome chicken Sambel Olek Marinade

Found this on the cover of Bon Appetite magazine long time ago.  My wife's favorite chicken recipe.

Fish sauce causes this to smell up the house, but it tastes great.  I don't do skewers.  Too much work.  I double the recipe and perfect for 3 to 4 pounds of chicken thighs.  This picture is Costco organic chicken thighs last night.  Oh my!

If you like sweet hot Asian spices I highly recommend this recipe.  I just heat it and reduce it.  Marinate in gallon zip lock overnight.  Reserve about 1/2 cup of marinade for when chicken is resting after you pull it off.
