Chipped Beef elevated using SRF

Backstory: my mother was from Baltimore, MD, and one of the things I vividly remember is she ate store bought Stouffers chipped beef A LOT. Chipped beef was her go to not cooking tonight meal, she'd boil her water and eat the chipped beef over a toasted slice of sourdough.  

Today, my wife and I got the itch, we both wanted homemade chipped beef - we've used the Cooks Country recipe before, so we headed to Costco. I couldn't find corned beef in the normal location, and I figured because of the time of year it would be in an end cap... then I saw it,  SNAKE RIVER FARMS CORNED BEEF AT MY COSTCO.  My wife and I grabbed 2 and high tailed it,  like we robbed the bank.  Anyhow.
