I thought it was pretty well known that a lot of products use cellulose as an anti-caking agent.

I was surprised to see that one brand of cheese they measured over 8% cellulose though. That might be enough to attract termites.

Being a devil's advocate here - the added cellulose isn't bad from a dietary perspective.  Adds fiber, displaces calories, retains moisture, binds stuff together, costs less and 100% natural processed wood!!!

The issue isn't that cellulose is present per se. It's more an issue of how much some brands are adding in lieu of actual product.
