Costco Prime Ribeye

It was sure cold last night...probably 5 below zero windchill. 

Indirect at 250 until an internal temp of 120. Fired up the egg direct to 600 with a CI skillet...two minutes per side basted with butter, garlic, and rosemary.  It turned out great!  

I have cooked many high temp cooks and always Burp the egg....I am very cautious.  After shutting down the egg, I returned after 5 minutes to get the CI.  Holy sh*t was there a huge flame that erupted when I opened the dome.  Make sure to Burp the egg...every time.
