For those who may wond r why I keep cooking this.
One it is delicious
Two i want it perfect and havent got there yet

Love paella on the BGE-it's "all good" and when you nail it, it is a passing eggsperience.
I have a LBGE and go raised direct and it seems to afford more of a chance to get the soccarat. But any paella cook is a winner-congrats.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
