@FarmerTom - beyond the rub you can adapt throughout the cook. The key for me is not to go that route (audibles during the cook). But if you focus on the finish-line then before that point the whole thing affords adjustments. I cannot over-emphasize the catching the "probes like buttah" finish. Hit that and you are there. Doesn't matter how you get there.
As I mentioned above, build a good stable fire and enjoy the end results.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

theyolksonyou , I took no offense. My reply reads a little stronger than i intended. I was getting pretty frustrated messing with it and right or wrong, it's on the egg now and what will be, will be. I appreciate everyones input.

Still waiting to do my first brisket and also get nervous whenever egging for a crowd so I can empathize with your situation. Having said that, I'll be eager to hear how this works out and when it does turn out fantastic it might nudge me to finally pull the trigger on a packer. Thanks for sharing and best of luck. Thanks StillH2OEgger. Pull that trigger and get you a packer. My only advice, don't get yourself in a bind where you have to come thru for a special gathering as I have. Find a smaller one and cook for your family. If it doesn't suit you, you can always fix/get something else. That's my one regret, not trying a small one at home first.
