Sweet Potato (or pumpkin) Pancakes?

Not really a question for anything on the grill, but I've been wanting to make sweet potato pancakes for a while.   Have found several recipes around the interweb, but many of the reviews talk about about gooey they are in the middle.   Just wondering if anyone has ever done these and has a good recipe for them?
