Fillets tonight, any suggestions???

Usually cook ribeyes, any suggestion for fillets? Thought is to reverse sear and maybe season with Meat Church Holy Cow, haven't used it yet so don't know what to expect. Thanks in advance.

I think reverse sear would be the way I would go with them. With reverse sear you will get all the good flavor of the cooking on the egg.
I've done them Sous Vide and finished on the egg, but they don't have the flavor you will get by using the reverse sear method.

I'm sure they will turn out great.......

Probably too late for you, but be careful if you reverse sear, very easy to overcook with a filet. A good bed of coals, well engulfed, will get you to 105º-110 on a hot grill and a rest will bring it to Med Rare in around 5 min
