Beets, not so much

Been wanting to try beets on the egg. Those were a fail as the family still does not like them, but the beet greens with leftover pulled pork and excess pepperoni from my last pizza party stuffed in a chicken hit the spot. I am loving baking in the egg now, so the bruschetta had to happen. Comments

Well, it looks good, even if some didn't like the flavor.
Some things you might try. The "beet" flavor intensifies with roasting. Try cooking them less. Smaller ones don't require as much heat to cook thru.
Also, varieties that have stripes, like Chiogga, or golden beets are much milder.
It doesn't take an Egg, but roasting them encased in a blanket of salt makes them have a great texture, and the residual salt changes the "beetiness."
