Argentine Asado (cookout)

I haven't posted in a while but couldn't resist sharing this. I was lucky enough to spend 10 days this month in Argentina with some old and new friends. Their cookouts are legendary and their beef is all local and very fresh. Other than the fact that they overcook it for my taste it was delicious and a ton of fun. The sausage was out of this world and the chinchuli'n (small intestines) were really out of this world. When I was asked how I liked my beef cooked and told them "red in the middle" they looked me like I had two heads. But the cook obliged and they all proceeded to make fun of me. You'll see in one of the pics that my friends "outdoor kitchen" is actually indoors...where he cooks several days a week, over open flame, but he has yet to burn his house down.

Incredible! I spent some time working in Buenos Aires a year or so ago and was blown away by the meat. It was all parillas (grill restaurants) and not home cooking like you enjoyed here, but it was incredible.
First time having beef udder for an appetizer!
And the malbec wine is amazing there. I haven't found anything comparable back here in Canada.New Brunswick, Canada

I should note that I didn't find it hard to get medium rare steaks at all. Just ask for jugoso. Seemed quite common actually, but maybe the restaurants are more accustomed to catering to us gringos.

Amazing. I love the asado cooking technique and the variety of the meat they cook. I really recommend chimichuri too - I always make it with steak.
My favourite story from when I was there: I befriended some locals at a guest house and they said they'd cook me a traditional asado meal. We went to the local butcher and we bought a huge variety of meat - there were only four of us. We grabbed wine and then they headed to the checkout. I asked "Shall we get some salad as well, to have on the side?"
One of my new Argentine friends turned to me and said, totally straight faced: "What, are you sure you'll still be hungry after all this meat?"
He fully intended to just cook and eat a massive pile of meat and nothing else. Didn't understand why I'd want to squander stomach space on leaves.
