First ribs / Cooked two ways

Kids love ribs so time for my first attempt. We like Memphis style, not wet sauced ribs so I gathered ideas on forum. Seasoned one with Laredo Red and did 2-2-1 approach. In to pic it is the rack on bottom falling apart. Obviously the 2-2-1 at an avg temp of 275 is to much in foil. Kids loved as they truly fell off bone and they could eat every bite. But next time either lower temp or less time in foil so as to crust up. Ended up only about 15-20 min after taking out of foil. 

2nd rack I used Bone Suckin Sauce and did same time as above. Good crust. Kids also loved them and preferred the seasoning over Laredo. I wanted to see results, might do 2-1-1 next time as the crust on the unwrapped was preferable...

    Skip the foil and you won't need to worry about crisping them up.  Foil is not needed to make the meat fall off the bone.  5 hours @ 275 untouched will have nice tender ribs without the mushy feel that using foil can impart.
