Metro has fresh NZ lamb shoulder chops or whole shoulders on sale at $2.99/lb, time to stock up  :)

    @Sea2Ski How are you cooking it tonight? We plan to use the chops for curry and whole shoulder for braising. May also try s.v.

    WOW! That's an awesome price. 

    Sprinkle some with kosher salt, cayenne, and cumin. Sear on the egg. Makes a tasty snack!

    Not sure how tough shoulder cut would turn out hot and fast, plus it's not a pleasant day for egging, ended up making lamb curry, Yum!  I'm in love with the book you recommended - Curry, Curry, Curry

    I've cubed them small when I've done it in the past. But I think I did that with only a part of it,  not the whole thing. 

    I've been meaning to try your DO in the oven trick for a while,  just haven't got around to it yet.

    @caliking I cubed the chops for curry, left some meat on the bones and threw them in too.  DO with lid in the oven is my go to method, make sure you reduce the water since there'll be very little moisture loss.
