Yeah I tried Porchetta. Pork loin wrapped in Pork Belly. I didn't follow the traditional Porchetta ingredients. I just used some rub and spices. It was good but the pork belly fat got to be too much. It was better when I reheated it in a frying pan. Maybe this rendered out some of the fat. If you are going to make this I would recommend trimming as much fat as possible. Oh yeah tying meat up is fun but challenging. Good luck!!!
