We had an outstanding holiday and New Years....thanks for asking. I hope you and yours had a great one as well.  As for my cook, I followed your methodology with one exception. I was not running as hot as you were. The result was a rare steak.....That was a good thing. Wow those Flat Irons are awesome. A perfect size for the weight loss program that starts up in a few weeks.

Awesome!!!  Glad it worked out well and you enjoyed it!!  Those steaks are quite a treat!
