New Year's luck and money cook. Had to call an audible

I married into a family with a luck and money traditional meal every year, so for the last twenty or so New Years days we would go to the wife's grandmothers house up until she was unable, then moved to the MIL. This year, they asked me to bring the meat. I had some beef ribs in the fridge so I volunteered them. Got the egg going about 1am and settled in at 250. Prepped the ribs with a Texas rub (S&P).
Then went to bed.
Up at 6am, egg still rock solid, threw them on and back to bed.
Well, Nana calls around 11 to say she thinks she has the flu.... Ummmm, guess we're eating ribs at home. Now, what to cook.
Pantry dive yields black eyed peas, some sweet potatoes for the adults and microwave Mac and cheese for the kids.
Happy ribs six hour later.

And desert is pumpkin roll complements of @piney 's lovely wife Sandy. Thanks again, hope the knee is healing well.
The boys declared these the best ribs ever and we proceeded to destroy the whole rack. Good thing we didn't go to nana's.
Tootsie is excited too, so I guess everyone is happy.
Well, except for Nana.

@dmw thanks to you. You helped me out last time I cooked beef ribs. I undercooked and you pointed that out. This time I nailed them except I should have bought more!
@tarheelmatt yes. I lit the egg got it stable and went to bed. At 250 I figured I want going to burn a lot of lump in 5 hrs. Just buried the wood (pecan and cherry) deeper in. We were planning to eat at 1:00 and I didn't want to get up and futz around with the temps at 4. Worked well. I was up for maybe 5 min putting the protein on. I'm not a morning person. -

I've got to stop being so cheap and do the next cook like you did ... five hours of idling along at 250 certainly didn't burn up that much lump. Last time I prepped everything ahead of time, then got up in the middle of the night, lit the lump, got it to stabilize, put the protein on, and then dragged myself off to bed after about two hours of lost sleep. Dumb. Dumb. Dumb.
