Christmas Dinner Rack of Lamb

I decided to do a rack of lamb for our Christmas Dinner. It was my first attempt at doing lamb on the BGE and I picked up a rack from my local butcher. Having researched the trimming that was going to be needed I underestimated the amount that would be coming off and the rack looked small by the time I was done.
Untrimmed Rack at just over 3.6 lbs
Trimmed up and covered with S&P, and a touch of Rosemary and Thyme.
About to pull it off and remove the PS for the sear. I was concerned on overcooking one side as it was noticeably smaller than the other, hence the dual probes.
Plated up with some fresh green beans and scalloped potatoes.
It turned out more med than med-rare but my wife does not like to eat med-rare. She loved the taste and tenderness of them and never turns down any thing I make on the Egg. I had some difficulty splitting the rack after the cook but I think I know where I went wrong there.

Looks mighty good from here! In the future with asymmetrical cuts like this rack, you can orient the thicker end toward the back (hotter) of the egg for more even cooking. Still, nice job!Sandy Springs & Dawsonville Ga
