First time cooking a prime rib, will definitely be doing this again. It was the best prime rib I have ever eaten. Rubbed down with kosher salt, black pepper and 2 cloves of garlic yesterday, let sit in refrigerator uncovered about 24 hours. Lit the XL about 830 this morning while waiting on the kids to wake up and find what Santa had brought them. Got it stabilized at 275 and put the #4.5 rib roast on. Cooked until an it of about 115, took off and tented while the pig shots finished. Removed the plate setter and did a reverse sear at 450-500 1 minute per side and each end to get good crust. Let rest a while and then sliced. I was very pleased. The rest of the family like it too. Great day spending time with family.
