Help - Can I make popovers in the egg

Merry Christmas! We are having 11 for dinner tomorrow and our oven died last night. I was already planning on doing the beef tenderloin in the egg, I figured I could do the twice baked potatos in the egg as well. But, we traditionally have popovers with Christmas dinner. Can I do those in the egg? 

I am also looking for timing advise, was planning on a reverse sear for the tenderloin.

    Absolutely.  Set up indirect you have an oven. You can cook the tenderloin indirect with the popovers....take that off when it hits 110F.  Put aside.  Finish the popovers, remove heat shield, crank temp and sear.  Popovers take about 30 minutes or more.  Probably about what it will take to get the tenderloin to 110.

    if you can do it indirect, you could do it much like baking bread.  There's nothing you can't do in the egg.  You may not want a lot of smoke, but just the indirect heat.
  • Yes you can.  I have a popover tin that I use, but muffin pan will work...they wont be as tall.  Just make sure the pan and fat dripping or clarified butter is hot before you add the batter...

    Thanks everyone! Christmas on the egg was a big success. Beef tenderloin, popovers & twice baked potatoes all done on the egg.
