Will the foil towel cooler method work as it does with pork or will it continue to cook? I need to keep it warm awhile

  • That's what I thought  Maybe if I wait for the temp to start dropping after it has rested. Just trying to keep it warm for an hour or so .

  • Doesn't need to rest, I cook and serve. Here is a good article on that.

    If you have to rest, I would undershoot by 10 degrees or so and allow carry over to get it there on temp. Your crust will soften, but the meat won't be so overcooked.
