A 16" pizza pan will fit nicely between the legs of a large plate setter giving you a wider heat shield on low and slows. FWIW...

The less distance between the heat shield and the gasket could potentially destroy a gasket - trust me.. lol

That's exactly what I use. Deep dish, aluminum pizza pan. Works great. Plus, I found it in the cabinet. We'd had it for years but never used it.

I have been using a 16" pan for all my low and slows for years. I foil it for ease of cleanup.
I put platesetter legs up, cake cooling rack (for air gap) then the 16" foiled pan (which sits inside the platesettter legs, then my grid on top.
Works perfectly.
