This is not my dough recipe. I went PS legs up, grid and then pans arranged to be shielded from any direct heat around the outer edges of the PS. RW lump and stabilized at 350℉. Rotated pans 180° mid bake to ensure uniformity of color. Used a cake tester for doneness testing.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
