Single versus double smoked ham

A little help please, I have two green hams (abt 12 lbs each) about to come out of a wet cure.  What is the between a "single" and "double" smoked ham.

Comments

  • you no longer have green hams. they're cured!

    praise jeebus, they are cured.

    anyway.
double smoked is usually one bought in a stored (which is already cooked and smoked), and using smoke when you reheat it.

in your case, you can hot smoke it to 140, or cold smoke, and then when you reheat it (if you chose to have hot smoked it) or cook it (if you had cold smoked it), you'd add smoke, doubling up on the smoke.  hence "double smoked"
