Turkey croquettes from leftovers

It's Friday night after a long week; what to cook, right? I had some smoked turkey breast from earlier in the week but I didn't want to just reheat it.
Croquettes! That's it!
I whipped out the Chinese cleaver and chopped up some of the leftover turkey - maybe 2 1/2 or 3 cups. I softened  a finely chopped medium onion in some butter. Add a couple eggs, some chopped cilantro, 1 cup seasoned breads crumbles, S&P. I formed this into 6 patties and lowered them into some hot Crisco. While this was going on I steamed some veggies and made some sweet potato oven fries. Not a fancy meal, but it beat local fast food. Sorry about the crummy low-light pic.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"
