17# Spatchcock Turkey
Decided to try a spatchcocked turkey for the first time for the Panthers/Saints game. Healthy layer of Dizzy Pig Raging River. Threw in two decent sized chunks of sassafras. Dome temp hovering around 300. I'll keep yall updated. Go Panthers!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Turkey turned out great, I couldn't believe how juicy it was. Definitely will be cooking my Thanksgiving bird this way for years to come.
