Ham over Turkey in XL

I've cooked ham over turkey's in the past on my WSM so was bound and determined to make it work on the XL. I'm glad to report that it can be done! It's a nice bonus to have the juice from the ham basting the bird below while they're cooking.
I started with Egret's ham recipe and a #10.5 ham. This went on the second from the top level of the A/R for about an hour by its self in a 250 egg. I had the woo down in the notches to give me a little more headroom for the ham and put a piece of t/f on the main grid to catch the initial drippings. Yes, this is the first time I've used the A/R.

The rig came out so I could put the spatchcocked bird on after about an hour. Bird was dusted with Three Little Pigs Touch of Cherry and John Henry's Pecan rub.

Then the the rig went back on top.

Pulled the ham at 150 and let Tom go another 30-45 minutes till done.

Bird was was super moist and ham was excellent! I also roasted the turkey giblets with some aromatics for the gravy. I had some nice drippings to add to the base. In my opinion the gravy was off the charts!
No time for any plated pics but we did end with Pumpkin Chiffon Pie.

NICE! We did ham and turkey as well, but side by side. Will have to keep this in mind for future HUGE meals (haha).

Thanks @Black_Badger. I forgot to mention my usual tradition of holding the turkey liver out from the makings for the gravy and sautéed that up separately for my Golden. After all, he deserves a nice turkey day too!Charlotte, NC
