Doing a Mad Max turkey and brining it at 38 degrees. Do i bring it to room temperature before putting it on the Egg
or do i just pull it out of the brine and prepare it and than put it on the Egg regardless of the temperature ?
Thanks and Happy Thanksgiving

No. Bring the bird to room temperature before bringing it to the egg. I've been told to place a bag of ice on the breast for about 45 minutes before cooking. Supposedly it allows the bird to cook evenly. I will try that tomorrow. I'm also considering aluminum foil on hand to stall burning.

Btw, it's a first for to me BGE a turkey but really think room temperature is important
