Gimme my baby back baby back baby back...ribs

Second cook in the books!!

This afternoon I fired up the BGE for some racks o' ribs! I had never cooked baby backs before on my gas grill so this was going to be an adventure for me! I bought the vacuum sealed pack from Costco the other day with three racks, membrane already removed.  I removed a little of the membrane they missed on a couple of the racks, cut them in half, rubbed a little yellow mustard on them and put some John Henry's smokehouse rub on them.  I left them uncovered in the fridge while I went off to work for a few hours.

I got home at two and fired up the egg with some hickory chunks in it, once it was going, I hooked up the Cyber Q and set for 230°, indirectt heat, plate setter, legs up.  When the smoke died down and the temp was steady, I put the V rack on upside down and set the 6 1/2 racks into the V rack and closed the lid.  2 hours later, I put them in a foil pan with a cup of apple juice, wrapped tightly with foil, and back on for another two hours.  I took them out of the pan and put the directly on the cooking grid for another hour to finish.

I didn't want any sauce this time, I just wanted to know what the ribs tasted like.  To me they were great! Juicy, just a little bit of pull to get them off the bone, but they came clean off. Nice smoke ring too... I think I may have used just a bit too much hickory, but that flavor came through.  I barely tasted the rub at all.  But I ate an entire rack, minus one.  My wife wanted to try it even though she ate dinner a couple hours before me.  She liked them and is happy we have two racks for tomorrow's dinner!

    Dude - sauce is okay when you're in the mood for it, but it truly ain't necessary.

    Those ribs of yours look good - sans sauce.

  • @Sardonicus thanks man! They were great! Totally agree on the sauce... Someday I'll add some sauce for the last hour just for a different flavor, but totally happy with how they came out, especially for my first time!
