First try at homemade sausage

I took my first try at making sausage from scratch today, and it turned out really well. I started with 9 pounds of pork butt and a whole chicken. I deboned and de-skinned the chicken and ground up and seasoned the chicken and pork Thursday night. Today, my son Philip and I stuffed some really nasty looking pig intestines with the ground up meat. Philip was a huge help with stuffing the sausages. We made kielbasa out of the pork, half normal and half habanero, and we made a special chicken sausage for my wife since she can't eat the pork. Then I smoked the sausages for a couple hours. The kielbasa went on the Green Egg. The chicken sausage went on the Ugly Drum Smoker. The Weber Kettle had smoked cabbage and corn. Good stuff, but a whole lot of work!
