About six months ago, went to a nice restaurant around the corner from the house (never been there before). The had "45 day aged" Cowboy cut ribeyes. Never having had "Aged" steak before, I ordered one, even at the hefty price tag they had on it.
I thought it tasted like **** and sent it back. Tasted like rancid meat to my untrained palette.Johns Creek, GA - LBGE and a some stuff -
I hate when stuff states like a string of asterisks.

aged meat is decomposing meat. and just as with cheese (essentially rotted milk), some folks like the funky stuff, and some don't.

When we go to our local wine and cheese shop, I always ask for their stinkiest cheese. And I always love it. I've had aged beef many times, just never aged it myself.

the first thing i used to recommend when someone said they wanted to dry age, was that they should go out and spend the coin on a legit dry aged steak. for one thing, they may not notice a difference. on the other hand, they may get all oogly and hate it.
better than waiting a month or more and then tossing an entire rib roast. hhahaha
