For the second time in two weeks my butcher had separated points in the case. I grabbed a 4.5# and a 3.5#. They are rubbed and on the egg now.

Turned out just like I'd hoped for. After resting for an hour I cubed them and then put them back on for another hour. I'll share a bunch tomorrow and then vacuum seal the rest. That way I can have burnt ends any time I want
