did some salmon tonight cooked it at 165ish 4pluse hrs was wonderful
i used a dry brine started the process wen washed and removed brine
then let it set all day today
used a normal dry brine
brown sugar salt garlic onion etc and so on
my question is
I looked up and seen my curing salt (pink salt) on top of the frig
now prolly a dumb question but has anyone used that to cure fish if so how much did you use and for how long

You don't need sodium nitrite to cure salmon. I have used it on salmon, makes it redder, not sure on any taste differences. Safety - you don't need it.
I usually cure with rum salt and sugar then cold smoke. Never gets cooked with heat.______________________________________________I love lamp..
