Local egg fest this Saturday

many of you know I purchased a large egg really cheap through my local pench a penny store for 699.
deal was I had to wait until November 14 to get it... Well the time is here.
its basically like buying an egg as a demo after it's been used once, but the best part is, I will be the one using it.
so I bought a couple racks of baby back ribs that were discounted for 3.95 per lb.
plan to do the 2 2 1 method at 250 degrees.
i like to put apple juice in the foil during the middle two hours.
looking forward to playing pics on Saturday!
any recommendations on rubs? I haven't found one yet with a good plent of sweet and spicy

Nice score. If you don't mind me asking, have you considered doing it turbo? I stay away from low and slow when cooking at eggfests simply because I want to crank out food faster for the masses. How big is the fest, # of cooking stations and # of attendees expected?canuckland

It's going to be a super small deal. It's only 10 large eggs that will be cooking. And I'm really not sure how many people will be there.Canugghead said:Nice score. I hate to rain on your parade but you will have nothing for the people that come to eat for 5 hours and the show will be over before your ribs are done! Much better to cook something that is quick so the people that come to eat have something to eat. Very boring watching an Egg slowly smoke only two racks of ribs.
I'm only hungry when I'm awake!
