Pork Belly - TRY THIS
About a month back we got 9lbs of costco. Thawed it and cut into 2 pieces.
My wife scored the fat cap and we used Dizzy Dust on one and Raging River, rubbed it in.
Laid it on a bed of onions, carrots, and celery sprinkled with brown sugar. The video that gave us the inspiration added beer, we opted to not and used apple cider only. I noticed at the end of their cook the vegetables were charred black, mine we edible and DELICIOUS.
Cooked at 325°F for 4.5hrs until skin crispy. It was melt in your mouth pork candy. My 18 month old had 3 helpings. Lol!

Today I cut about 1/4" thick and seared it in butter in my lodge skillet. .

Okay, this just made it to this weekend's menu. My butcher always has bellies for really cheap. He says "nobody knows how good it is".
Really great looking cook.

That Costco belly, if it's like the stuff I bought, is great for this type of cook because it's relatively lean. Anyway nice job.______________________________________________I love lamp..
