Decided to cook up a Cowboy
Decided to take the plunge today and try my first reverse sear. And if I'm going i might as well go big !!!! This Cowboy Ribeye weighed in at 2.35 lbs, and I hit it with a little olive oil and then rubbed with Meat Church Holy Cow. Cooked at 275 until IT was 115 then took off to rest while temp was brought up to 650. From there it was 30 seconds and flip then off and check with the Thermopen. Final temp was between 128 and 134. Sorry for the lack of sides, there just wasn't room on the plate for any But trust me, there was Acorn Squash to go with.

Thanks guys, and Mike is right, if given the go ahead the dog's would have finished it but one has some health issues so I have to keep her beef intake low. Unfortunately for her she probably won't get much of the pork butt that just hit an IT of 195 either :(
