Max-Spatch

My better half brought home a few chickens from Costco ($5 off a three pack), and it was a great excuse to fire up the MMax. 

Altho we have done many a bird on the LBge over the years, I have yet to try one on its little brother. 

Once lit, I let  the little guy climb steadily to 650F before putting in the guts (woo, stone and drip pan).   I expected it to drop sharply, based on my experience on the LBge....but it continued to hover around 600F.  No worries, once the bird goes in it should drop to 400ish...right?

In the meantime, the bird was prepped and spiced (S&P, paprika, cayenne, garlic powder). 

At this point, even tho the temp was still high, I was confident that I could cool it down by messing with the air flow, opening the dome, and throwing the bird into the unit.  



The bird fit perfectly, and sure enough, the temp dropped to 450-500F...just not enough.  I was looking for 375-400F, so I tightened the airflow to almost nil.   Soon enough, I hit 400F and that's where she stayed. 




Bird was doing well, and about 30 mins in we started basting with homemade "chicken sauce" (reverse engineered Swiss Chalet dipping sauce, essentially BBQ sauce for chicken). 




45 mins later, out came the bird.  In a word, perfect.   Not bad for a first spatchcock on the MMax.   (Excuse the leg in the pic, thigh pulled away from the bone upon egg removal). 



Bird was tented for 10-15, and then carved up.   Needless to say, it was delish!  



Extremely pleased with the versatility of having 2 eggs.  Finding out that the MMax can do everything the Large can do, grill space allowing of course.

    Nice cook!!  I've found that the smaller eggs are just more fun cramming stuff in them to cook.

    Great post! As a new egger, I'm always happy to see the vent openings that people use.

    also, I bought the mini while I am waiting for my large, and honestly, the large is going to last me a million years, cause I may never use it lol
