Love your smoked chicken salad, so easy, delicious and convenient. Smoked up a batch to be vac sealed and frozen for days when we're too busy to cook!
Dry brined, heavy hickory smoke, 250 till IT 150, to be chilled, deboned and skinned before vac sealing.

The last few times I've pulled the skin and really got it crispy. Chop real fine and throw it back in the mix. Loveless Cafe has a kick ass peach rub... Sometimes I put a fresh peach in it.Green egg, dead animal and alcohol. The "Boro".. TN -
@henapple, too bad we weren't planning on eating any fresh... the hickory smell is amazing and the skin is crispy (cranked up temp last half hour). Think I'm going to freeze with the skin on, then try crisping it up as toppings in the future.canuckland

@logchief Thanks! I smoked these breasts to be frozen for future Smoked Chicken Salad inspired by @henapple a while back. Heavily smoked chicken is the star ingredient, you can use your favourite rub but I dry brined with light salt only and smoked with about five large chunks of hickory. I'm having trouble finding his recipe but I kind of tweaked it anyway ... for example I dice instead of shred the chicken, use yogurt instead of mayo (one of my kids can't eat mayo).canuckland
