OT - Cooks Illustrated Cold Oil Fries
This method is the by far the easiest and best tasting homemade French Fry recipe out there IMHO. A buddy of mine led me to this method years ago. It's the only way I do them. If you haven't tried them yet, give them a go!

Those do look great. Have you heard of an Air Fryer. I just got one and its great for fries and only uses 1 tablespoon of oil.

Thx guys! @SmokeyPitt , the method calls for Yukon Golds. They absorb less oil apparently. @Tinyfish , I've never heard of those! I'll hafta look those up.

Thanks @Dyal_SC, I was in the process of some leftover pulled pork and made some sweet/sour slaw with jalapeno and those fries looked great, so I jumped on it.
Fries came out superb, I'll do those again in a heartbeat and my Bride loved them with some really cheesy homemade blue cheese dressing. Thanks again @Dyal_SC, that'll be my go to in the future, sure topped off dinner.
