Cutting frozen meat

Going to be picking up a Pork Belly from Cash & Carry sometime soon. It is a full, 15 or so pound Belly. And it is frozen. Want to break it into 2, perhaps 3 pieces. Fire up the chainsaw?  Any suggestions?

    Good serrated knife and wheaties for breakfast.  Then get the knife resharpened.

    The pork shoulder I bought at RD I thought was a two pack, looks like is one behemoth shoulder.  I'll be cutting it in two to cook separately.

    @YEMTrey The OP is referencing a 15# belly to be cut into 2-3 more manageable sections not a shoulder :smile: . Most Big Box Stores sell Boston Butts as a 2pk

  • I have found that a good local grocer or even your neighborhood carniceria will cut something like this for you on their band saw, especially if you buy something from them.

    A clean hand saw will do it.  But I'd give a large cleaver or chef knife a chance first.

  • ^ zackly.  a clean hacksaw blade will do the job when in a pinch.

    First of all, are you smoking/curing all at once. If you are trying to slice it frozen, I promise that a power tool is required. Depends on your tool collection and how finicky you are. Personally I would wrap it in film and put it in my vice and cut it with my sawzall if I didn't own a bandsaw. Or as others suggested, a handsaw for carpentry. On the other hand you could defrost and portion it and then freeze. But bacon doesnt last long so why bother. Cure it all at once.

    Not buying from a grocer. Cash and Carry is a restaurant supply place,  sort of. All there meat comes in whole (?) Cuts. Pork butts, chuck rolls are in a 2 pack. Cheese is in blocks. Milk is multi packed. Not much in the way of butchers in Eastern Washington, and they are damn proud of their products $$$.
    Guess I will be picking up a new hacksaw. Can't see using any type of kitchen blade on a rock solid piece of meat. I think a cleaver would just bounce off it lol....

    Thanks to the suggestions. Was looking forward to firing up the chainsaw lol...

    you could thaw it or partially thaw it and just cut and refreeze. i would probably do that even though i have an old army canteen meat saw at the house ;)

    I have cut through frozen meat before just using a serrated knife as mentioned above.  It wasn't a whole belly or anything, but there was really nothing to it.  It may not be the best thing for the knife I suppose.  FWIW I have an electric knife but I found I could do better with a serrated knife and a little elbow grease.  I am sure a hack saw would work but it seems like the blades are always painted and that would worry me a little.
