    I'm by no means an expert, but 4 days seems like a long time to brine.  I've never heard more than 24 hours..
  • Turkey looks great. This is my first year with an XL so I'm doing the turkey this year. 21 pounder. 2 questions. What are u basting it with, and would it be ok to put the turkey directly on my grate and have a pan under it on the plate setter? Hope mine turns out as good as yours looks.

    I had an issue with all the drippings burning off later in the cook. My Thanksgiving turkey I was going to have some stock set aside to bast it with towards the end.

    I use a baster to collect the juices from the roasting pan, mostly a mix of white wine, melted butter, spices and fresh herbs, and turkey drippings.  It makes for great flavour and colour on the bird.  I have never done the turkey directly on the grill personally, but I can't offer any concrete reasons not to.  Best of luck with your cook, BGE turkey is something special.
