4 lb roast cooked to 165 IT before going into the pan with the vegetables to bake a bit. In 3 more hours, I'll shred the meat and allow most of the liquid to boil off. Then it's sandwiches!

We made sandwiches on kaiser rolls with a little horseradish and cheese slices. I'll definitely do this cook again. The sandwiches were delicious.

Thanks, @Terrebandit. There are 2 large bell peppers, 1 large red onion, and 6 minced garlic gloves for the veggies. The liquid is 1/4 cup Wostershire sauce and 1 can of Guinness Stout. The roast was smoked indirect over pecan wood at 275 to an IT of 165. It was then put in with the veggies and tightly wrapped with foil to bake at 350 for 3 more hours.After the 3 hour bake, the foil was removed, the roast shredded and then put back on the Egg to reduce the liquid by half.
This is the first time I've tried this cook and I will definitely be doing this again. It's a day long cook, and it was very tasty.
