Anyone made summer sausage?

I am wanting to smoke some deer summer sausage and was wondering if anyone had done it on a egg before?

    @leemschu - here is a post covering my adventure with making summer sausage on the egg.  Short answer - it worked well!!  Longer answer as you probably guess the egg isn't purpose built for smoking sausages.  With a little patience and creativity you can turn out great results.

    this is exactly why I love this forum! great work @BigWader have you done it since?  @leemschu I am hoping to get some venison sausage this season and will def try this.

    I started doing some meat sticks on the egg to see if I liked doing the "charcuterie' things. I loved it.

    The space is limited on the LBGE. I figure if your going to go through all the work, might as well make it worth your time. The mess is just as big for 10 lbs as it is for 50 lbs.

     I have graduated to a full smoker to do this.

    We are doing a 60 lb sausage run this Friday, and smoking on Saturday.

    But back to your question, my first run of summer sausage I did on the egg. I  had 4 casings, 2 jalapeno and cheddar and 2 standard summer sausage. That is all I could fit at the widest points of the egg. You could fit more, but then you are wasting casings by not filling them fully.

    Once you catch the fever of doing it you will never go back to the store bought stuff.

    @jbreed I've done it a couple times but not documented.  Here is another cook I did for snack sticks where I was able to load the egg pretty full.
